Colt meat

Colt meat is a rich source of iron, essential acids and protein and has excellent nutritional characteristics. Thanks to the large number of breeding mares in the Valley, the municipality is one of the main distributors of this type of meat, considered a local speciality and delicacy of the Girona Pyrenees.

It is a distinct, top quality gourmet product of great culinary value and is an important regional speciality. During the gourmet season celebrating colt meat, in the spring, a series of establishments in the valley present a collection of traditional and innovative dishes with colt meat as the star ingredient.

The Ripollès region benefits from the ‘Ripollès Mountain Colt’ quality assurance standard, which certifies the strict regulation of the meat’s production.
